The Aria Amazon kitchen is fortunate to be led by Peruvian chef Pedro Miguel Schiaffino, known for his passion for using local Amazonian ingredients in innovative and delicious dishes while also responsibly conserving these spices. His exceptional work has earned him worldwide recognition, with Malabar and Amaraz restaurants being among the top 50 in the world. Schaffino, a consultant chef in the Aria Amazon kitchen, is responsible for designing the menu and structuring the dishes to be served on board.
Dishes like “Causa” with Shrimp Escabeche, Coca leaf Alfajores, Bitter chocolate Truffle, Crunchy Avocado, and Fresh Buffalo Mozzarella Salad, Brownies, and pecan caramel Ice Cream Sandwich and Chichen Stewed in Fermented Palm Fruit are served.
